Rolled rib of beef joint is one of the prime roasting cuts and makes a superb roast dinner. The lean muscle is nicely marbled and the whole joint is covered with a natural layer of fat, preserving full flavour and tenderness.
Rolled sirloin joint contains less fat than the rib and is very tender, so it is one of the more expensive cuts. It is another choice cut for a Sunday roast.
