How to BBQ St Louis Ribs

St. Louis ribs are notorious for being the beast of ribs. St. Louis ribs are famed for being competition-style ribs and are perfect for a summer’s BBQ or even a friendly ribs competition if you’re feeling competitive.   

These ribs are extremely tender when cooked right and are guaranteed to be a crowd pleaser at your next BBQ. 

Cooking Method

  1. Grab your ribs and smother both sides with mustard. Once smothered, add your Angus and oink dirty cow seasoning (or any dry rub that you prefer) and sprinkle all over making sure to dust the ribs in seasoning. 
    Leave to marinate for up to 1 hour 
  2. Using the indirect method, preheat your grill to 350F. 
    Lay your ribs on the BBQ, bone side down and cook for 30 minutes with the lid. 
  3. After 30 minutes, transfer your ribs to foil and fold the sides upwards. Add your apple juice by pouring over the meat and completely tuck the ribs in with foil, leaving no room for escape.
    Return to the grill at a higher temperature (about 365-375F) for 30 minutes. 
  4. Lower your heat down (250-260F) and remove the ribs from the foil carefully and place back onto the grill. 
  5. Add your BBQ sauce by brushing it along the ribs 3-4 times within a 20-30 period ( or until the internal temperature of the ribs has reached
