T Bone Steak is a prime steak cut, perfect for a feast fit for a king- quite Literally! A famed favourite of King Henry VIII will satisfy even the hungriest person. The Bone in steak consists of cuts of fillet and sirloin making this a meat lovers dream.
For a feast with friends and family, our aged T-Bone Steak is a thing of beauty and one to not miss out on.
Bring the steak to room temperature (about 1 hour out of the fridge) for even cooking.
Pat dry thoroughly and season generously with sea salt and black pepper (or rub with olive oil for extra crust).
For best results, use a high-heat method: sear in a very hot pan or on a piping hot grill/BBQ for a rich, caramelised crust (3-5 minutes per side), then finish over indirect heat or in a preheated oven at 180-200°C (fan 160-180°C) until your preferred doneness (medium-rare highly recommended for optimal tenderness and flavour, target internal 55-60°C). Rest loosely covered with foil for 10-15 minutes before carving, this lets the juices redistribute for incredibly tender, flavourful results on both the fillet and sirloin sides.
Carve against the grain, serving portions off the bone for easy sharing (the bone adds extra flavour during cooking).
