Beef Shin Ragu and Beef Pie

Perfect for a rainy Sunday, this is a super simple slow cooker recipe for you, that can be used on repeat during the week for a variety of quick and easy dinners. I’ve made mine into a beef pie, and have a tagliatelle dish on the menu for mid-week too, but this will give you 12 generous single portions for any other recipe you wish to create!  

Cooking Method

RAGU How-to 

  1. Start by seasoning your beef shins generously with salt and pepper. 
  2. Add your EVOO to your multi-cooker (or pan on the hob) and sear the beef shins until browned-off all over, then remove and pop onto a plate for later. 
  3. Next, add in the chopped onion, garlic puree, diced mushrooms, chopped carrots, chopped tomatoes, all herbs (dried oregano, basil and parsley) and the mustard powder and stir. 
  4. Sprinkle in a heaped tablespoon of plain flour and stir to mix, allowing the flour to be cooked out. You’ll notice the mix thicken considerably. 
  5. Pour in your red wine next (I used Rioja but any red wine will do) and stir to de-glaze. This will pick up all the good bits stuck to the bottom of the pot to combine into the sauce. 
  6. Now add in the tomato puree, passata, Worcestershire sauce and a beef stock pot along with 400ml boiling water. Give this all a really good stir together to combine. 
  7. Pop on your slow cooker lid, then set the timer for 5 hours. I usually set an alarm to check at the four-hour point, then go for one more hour after if needed. 
  8. Once done, carefully use tongs to take out the beef shins and pop into a large bowl. They should be fall-apart by this point, so use two forks to gently break up and pull apart, then add back into the sauce. 
  9. Give it one final stir to ensure it’s thick enough, then either dish up there and then for dinner, or split into twelve individual portions (or six double portions) ready for dinners in the week. 

 

PIE How-to 

  1. Pre-heat the oven to 190 degrees celsius. 
  2. Remove the pre-rolled pastry from the fridge, sprinkle a small amount of flour on a clean worktop and roll out to match the size of your dish. Three quarters for the base and sides, then a quarter for the lid. Grease the oven-proof dish with butter using some kitchen roll. 
  3. Lay three quarters of the pastry in the dish and gently ensure it reaches all the sides / corners. 
  4. Ladle in 6 portions of your Beef Shin Ragu and gently smooth across the whole dish. 
  5. Carefully add your pastry lid, then using the pastry sides, gently fold and pinch over the lid to secure together. Follow round with a fork to press the sides closed. 
  6. Prick the top of the pastry lid all over with the fork. 
  7. Beat an egg in a small dish, then gently brush over the tops and pressed sides of the pastry. 
  8. Pop into the oven for 35 minutes until the pastry is golden and crispy, then remove and sit aside for 5-10 mins. 
  9. Serve into 4 large helpings, or 8 half-portions for lunch prep / child-sized portions. 

The Ingredients

Beef Shin Ragu: 

  • 15 sprays extra virgin olive oil (1-cal spray)
  • 1kg of Village Butchers trimmed beef shin (mine weighed in at 1.32kgs), seared
  • 154g red onion, chopped
  • 247g closed cup mushrooms, chopped
  • 430g vine ripened tomatoes, chopped
  • 179g carrots, chopped
  • 23g garlic puree
  • 1tsp each of dried oregano, dried basil and dried parsley
  • 1 heaped tsp mustard powder
  • 18g plain flour
  • 148ml Rioja wine
  • 29g double concentrate tomato puree
  • 219g passata
  • 1tbsp Worcestershire sauce
  • 1 beef stock pot with 400ml boiling water 

Beef Shin:  

  • 6 portions of the above Beef Shin Ragu
  • 320g Ready rolled puff pastry
  • 1 Large free-range egg, whisked
  • Butter for greasing 

What To Serve With Beef Shin Ragu and Beef Pie

This pie pairs perfectly with creamy mashed potatoes or buttery new potatoes to soak up the rich ragu gravy. Serve alongside seasonal greens such as steamed broccoli, green beans or peas for a fresh contrast to the hearty filling.

Frequently Asked Questions

Yes, the ragu is perfect for making in advance. In fact, the flavours often deepen if it’s left overnight in the fridge. Simply reheat gently on the hob before assembling the pie, or use it straight from chilled if baking the pie straight away.

Absolutely. The ragu freezes very well for up to 3 months in airtight containers. You can also assemble the pie and freeze it before baking—just defrost in the fridge overnight and bake as normal until the pastry is golden and heated through.
