Lamb shoulder is excellent for slow roasting or pulling, while lamb shanks are perfect for braising in sauces.
Cooking times vary by cut and method, but low and slow is key. Lamb shoulder usually takes 3–4 hours in the oven at 160°C (fan 140°C) or 6–8 hours in a slow cooker on low. Lamb shanks need 3–4 hours in the oven or 6–8 hours in a slow cooker. Always rest the meat for 10–15 minutes before serving to allow the juices to redistribute.
