Start by bringing the steak to room temperature about 30 minutes before cooking, and pat it dry to help with searing. Season with salt, pepper, and any additional herbs. Heat up your pan, then add a small amount oil. Sear your venison steak for 1½ to 2½ minutes on each side, aiming for medium-rare to medium doneness (an internal temperature of 52–57°C). Avoid overcooking, as venison is very lean and can dry out quickly. Once cooked, rest the meat for 5-10 minutes so the juices to redistribute.
