Bring the steaks to room temperature (about 1 hour out of the fridge) for even cooking. · Pat dry thoroughly and season generously with sea salt and black pepper (optional light rub with olive oil for extra crust).
For pan-searing: Heat a heavy-based pan over very high heat until smoking hot, add high-smoke-point oil or clarified butter, then sear 3-4 minutes per side for medium-rare (internal 52-55°C), turning once or twice for an even golden crust. Baste with butter, garlic, and herbs in the final minute for added richness.
For grilling/BBQ: Preheat grill to high/direct heat, sear 3-5 minutes per side for medium-rare (or to preferred doneness), moving to indirect if needed. The natural marbling renders beautifully for self-basting succulence.
For stir-fry/fajitas: Slice thin against the grain before cooking, then stir-fry in a hot wok or pan 1-3 minutes total with vegetables and seasonings. Check our guide to safe cooking temperatures for details.
Rest loosely covered with foil for 5 minutes, this lets the juices redistribute for maximum tenderness and flavour.
Slice against the grain (essential for this cut) into strips or serve whole.
