Available in generous joints: 1kg (serves 3-4), 2kg (serves 6-8), 3kg (serves 9-12) boneless, expertly rolled and tied, ready for your oven. Delivered fresh in temperature-controlled packaging and suitable for freezing.
Bring the joint to room temperature (about 1-2 hours out of the fridge, depending on size) for even cooking.
Pat dry thoroughly and season generously with sea salt, black pepper, and optional herbs (e.g., rosemary, thyme, garlic) or a light rub for extra flavour and crust.
Preheat oven to 220°C (fan 200°C / Gas 7) for initial high-heat sear, then reduce. Place in a roasting tin (on a trivet of vegetables like onions, carrots, celery for aroma if desired). Roast uncovered for 20-30 minutes to develop a golden crust, then lower to 180°C (fan 160°C / Gas 4) and continue low and slow: allow approximately 20-25 minutes per 500g plus 20 minutes for medium-rare (recommended for best tenderness and juiciness), or adjust for preferred doneness (use a meat thermometer, target 50-55°C internal for rare, 60-65°C for medium). Rest loosely covered with foil for 20-30 minutes (or longer for larger joints) before carving, this lets the juices redistribute for incredibly tender, flavourful slices.
Carve thinly against the grain into even portions for serving.
