Cooking Method

  1. Prep your marinade by combining your honey, tomato ketchup, soy sauce, mustard and worcestershire sauce in a pan to simmer for two minutes.
If the sauce hasn’t thickened, keep simmering for another minute or two being careful not to simmer for too long.
  2. Remove your thickened sauce from the heat and leave to the side. Add your pork chops to a dish and carefully pour over your sauce making sure to evenly cover each pork chop. (You can leave a few tablespoons of marinade to the side for later)
Cover the dish and stick it into the fridge for 1 hour or long-ideally leave them as long as possible to marinade.
  3. Heat your barbeque to a medium to high heat.
Once heated add your pork chops to the barbeque and cook for 30 minutes, making sure to turn them every few minutes to cook.
Your pork chops should be heated to an internal temperature of 145  °F
If you have left over marinade, you can brush it over each side of the pork chops before turning.
  4. If the pork has reached the right internal temperature, you can remove and serve with all your favourite BBQ sides.

Both pork loin steaks and pork chops come from the loin section of the pig. As this is one of the least worked parts of the animal, both cuts are characterised by the leanness of their meat. The main difference between the two comes from how they’re cut from the loin. A pork loin chop is a single cut from the loin with the bone attached. They can be prepared with or without French trimming. The pork loin is the section of meat removed without the bones.
