Beef Shin Tacos

You can’t beat some tasty tacos when you’ve got a gathering of people coming over for a barbecue. Jack from Jacks Meat Shack has put together a recipe for amazing Mexican tacos that are sure to be a hit with all your family and friends and leave them wanting more. See how he prepares them below…  

 

Cooking Method

  1. Set up your barbecue for indirect cooking and stabilise the temperature at 135C. 
  2. Remove the beef shin from its packaging and lightly slash the surface with a knife. This will allow the dry rub and smoke to penetrate the meat effectively.  
  3. Season liberally with your barbecue rub and allow to stand for 30 mins. 
  4. Place the beef shin into the barbecue. 
  5. Add the dried chillies into a bowl and rehydrate with boiling hot water. Once tender, remove them from the water and take out the seeds. Keep the water for later on. 
  6. Roughly chop the onion then add to the blender along with the chillies, garlic, and tinned tomatoes. Blend until completely smooth.  
  7. Pour the mixture into a pan and heat gently, add the beef stock cubes, 500ml of the retained chilli water and the remaining seasoning.  
  8. After roughly 2 hours, put the beef shin in an oven proof dish and pour the sauce over the top.  
  9. Cover the dish with tin foil and cook for another 6 hours or until the meat becomes tender and falls apart.  
  10. Shred the meat using two forks and remove the bone (which should come out easily). Mix the shredded meat in with the sauce in the dish. 
  11. Assemble the tacos – add finely shredded lettuce to a hard-shell taco along with a spoonful of beef, onion, and jalapeno, and enjoy.

  • 3 pasilla chillies 
  • 1 beef shin 
  • 5 guajillo chillies 
  • 5 chillies de arbol 
  • 2 beef stock cubes 
  • 1 tbsp cinnamon 
  • 6 bay leaves 
  • 1 tbsp coriander 
  • 1 tbsp black peppercorns 
  • 1 tin tomatoes 
  • 1 white onion 
  • 8 garlic cloves 
  • Salt to taste 
  • 1 pack hard shell tacos 

For the taco garnish 

  • Red jalapeno 
  • Shredded iceberg lettuce 
  • Finely diced white onion

There are a number of different cuts of beef that can also work well in tacos but for this recipe the shin is the star. Not only is it very affordable but it also packs the most flavour which is ideal in a dish like tacos where you need good flavour from the meat to keep up with the other ingredients.  

It has long been debated whether hard shell or soft-shell tacos are superior, but both bring a lot to the table. Ultimately it comes down to personal preference, some people love the crunch and structural integrity of a hard-shell taco for holding the filling whilst others prefer the lighter texture of a soft shell. No matter what type of shell you choose, this recipe will be a winner for everyone.
