Brisket

Beef brisket is a BBQ staple and an incredibly popular comfort food amongst meat lovers. It might be a fan favourite but it’s not always the easiest to get right, thankfully Jack from Jacks Meat Shack is here with an easy-to-follow recipe so you can reach brisket perfection. Cooking Method

  1. Preheat your grill to 100C and set it up for indirect cooking. 
  2. Trim off any hard lumps of fat on the meat as these won’t render. 
  3. Coat the meat with mustard as a binder, then season it all over with your favourite multi-purpose rub.  
  4. Place the brisket on indirect heat.  
  5. Continuously check the internal temperature of the brisket. When this reaches 60C wrap it in butchers’ paper or tin foil. Increase the temperature of the grill to 135C and put the brisket back on the grill.  
  6. Allow it to cook until the internal temperature of the meat reaches 95C. 
  7. Remove from the heat and rest for at least an hour to allow the juices to redistribute. 
  8. Slice thinly and enjoy with your favourite sides.
