Cranberry, bacon, and sausage stuffing balls

These cranberry and sausage stuffing balls with bacon make the perfect accompaniment to a Christmas dinner. Bringing together all the Christmas classic flavours, this recipe is sure to be a hit with your whole family and leave them wanting more. Take your Christmas side dishes up a level with these must try stuffing balls.  

Cooking Method

  1. Pre-heat your oven to 200C/fan 180C/ gas 6. Take the skins off the sausages and put the sausage meat in a large bowl with all the other ingredients, minus the bacon.  
  2. Season the ingredients and use your hands to work it all together until mixed well and evenly distributed. 
  3. Use the mixture to create 16 short sausage shapes and wrap each one with a sprig of rosemary, encased in a piece of streaky bacon.  
  4. Put on a baking sheet and cook for 30 mins with the other vegetables whilst the turkey is resting. Serve alongside your other Christmas dinner items.  

The Ingredients

  • 1 pack of pork sausages 
  • Bunch of spring onions, finely chopped 
  • 75g of dried cranberries 
  • Handful of fresh rosemary, chopped, and sprigs for wrapping 
  • 150g of fresh white breadcrumbs 
  • 1 medium egg, beaten 
  • 16 rashers of streaky bacon

There aren’t any sides to go with this dish as it is one of our Christmas side recipes. However, this is a great example of something a bit different you can do with your Christmas ingredients and save you a lot of time and energy on an already stressful cooking day. Why stuff your turkey when you can create these delicious stuffing balls to serve alongside it instead?
