Hot Buffalo Chicken Burgers

Succulent, juicy chicken burgers always make a popular addition to any barbecue. If you like a bit of spice this recipe will be perfect for you. Cooking Method

  1. Put the chicken thighs into a large bowl. Combine the hot sauce, paprika, maple syrup, vinegar, garlic granules, and butter in a different bowl.
  2. Pour the mixture over the chicken, toss it, cover the bowl, and chill it overnight.
  3. The next day, make the ranch slaw by tipping the cabbage, onion, celery, mayonnaise, sour cream, vinegar, and chives into a medium bowl. Season to taste and mix until everything is thoroughly combined.
  4. Light the barbecue. Once the coals are ashen, place the chicken on the grill and cook for 8 minutes on each side, basting with the leftover marinade as it cooks.
  5. If not cooking on the barbecue, cook the chicken under a hot grill for 8-10 minutes on each side, basting with the marinade.
  6. When the chicken is fully cooked, put half a slice of cheese on each piece and leave to melt for 1 minute. Put two pieces of chicken thighs on the base of each bun, spoon on some slaw and sandwich with the bun tops.

The Ingredients

  • 8 chicken thighs (boneless and skinless)
  • 100ml of buffalo hot sauce
  • 2 tsp of sweet smoked paprika
  • 3 tbsp of maple syrup
  • 1 tbsp of white wine vinegar
  • 1 ½ tsp of garlic granules
  • 30g of melted butter, cooled
  • 4 slices of Monterey jack cheese, cut in half
  • 4 split brioche buns

For the slaw

  • 1 finely sliced pointed spring cabbage
  • 1 small, thinly sliced red onion
  • 2 finely chopped celery sticks
  • 50g of mayonnaise
  • 50g of sour cream
  • 1 tbsp of white wine vinegar
  • ¼ bunch of finely sliced chives
