Low and Slow Lamb Shoulder with Mint Yogurt and Flatbread

This recipe is such a simple one, but packs an incredible flavour. This can be served as a simple flatbread or rolled up as a wrap (gyros). With such a simple recipe this is an easy dish to make and has been created to wow and tantalise the tastebuds from the juicy tender Lamb, the peppery taste from the Rocket finished off with the refreshing Mint and Pomegranate. This has become a firm favourite within our home. We use this recipe for parties, rolling the flatbread and slicing into small bitesize gyros.

 

Cooking Method

  1. Roughly chop the Carrots and Onions add to the Slow Cooker Pot
  2. Take the Lamb Shoulder, prick with a knife, drizzle with oil, sprinkle with the Thyme, Garlic, Rosemary, Salt & Pepper, Rub down with Oil and sit on top of the chopped mix in the Slow Cooker.
  3. Add the Stock, to the side of the meat so not to wash off the seasoning.
  4. Set Slow Cooker on a Low heat for 8 hours.
  5. Whilst meat is cooking, make your yogurt drizzle, for this take a couple of spoons of Natural Yogurt, a generous helping of Garlic and a handful of roughly chopped Fresh Mint.
  6. Once the meat has come to end of its cook time, remove from the liquid, the meat should be soft enough that you can pull apart with a fork or bear claws. Place your Flatbreads into a pre warmed oven for a few minutes to get ready. Take your portion ready to make your Flatbread.
    SIDE NOTE : If you keep the liquid, freeze it or store for use this makes an unbelievable gravy.
  7. Once removed Flatbread from oven, start by spreading your Fresh Mint Yogurt onto the Bread, next hit it with a layer of Rocket, load up with your Slow Cooked Lamb. Then drizzle more Yogurt over the top of the Meat, a garnish of Rocket and a sprinkling of fresh Pomegranate Seeds.
  8. Serve as is or rolled as a wrap.

  • White onions X2 , Chopped
  • Carrots, Chopped
  • Dried Rosemary
  • Garlic Granules
  • Dried Thyme
  • Salt & Pepper
  • Lamb or Chicken Stock, 3pints
  • Oil
  • Flatbread
  • Pomegranate
  • Rocket

What To Serve With Lamb Shoulder

Low and Slow Lamb Shoulder with Mint Yogurt and Flatbread pairs beautifully with a range of sides that enhance its rich, tender flavour. For a classic touch, serve it with roasted potatoes, charred vegetables, or a fresh cucumber and tomato salad. If you’re in the mood for something more adventurous, try spiced couscous, smoky eggplant dip, or a zesty carrot and pomegranate slaw. Don’t forget to drizzle on some extra mint yogurt, a squeeze of lemon, or a splash of harissa for an added depth of flavour.

Frequently Asked Questions

Soft, pillowy flatbreads like naan, pita, or Middle Eastern laffa work perfectly. If you prefer a crispier texture, try lightly toasting them before serving.

Store leftovers in an airtight container in the fridge for up to 3–4 days. To reheat, warm gently in the oven at 300°F (150°C) with a splash of broth to keep the meat juicy.
