These tender, bone-in chicken thighs are marinated overnight in a bold blend of sweet maple syrup and spicy sriracha, then seared to perfection on a hot grill for a crispy, caramelised exterior. To elevate the dish, we’re serving them alongside roasted vegetables that offer the perfect balance of smokiness and sweetness. Finished with a drizzle of extra maple syrup, a sprinkle of sesame seeds, and a touch of fresh cilantro, this grilled masterpiece is sure to impress.

 

Cooking Method

  1. Marinate for Maximum Flavour (4-24 Hours Ahead) – Mix it up – In a bowl, whisk together all the marinade ingredients until smooth. Coat the chicken – Massage the marinade evenly into the chicken thighs, ensuring full coverage. Chill time – Cover and refrigerate for at least 4 hours (overnight for deeper flavour).

  2. Fire Up the Ninja Woodfire

    Mode: Air Fry at 180°C
    Total Time: ~25 minutes

     – Preheat for 5 minutes.
     – First cook: Place chicken skin-side up and air fry for 10 minutes.
     – Flip & cook: Turn skin-side down and cook for another 10 minutes.
     – Final flip & baste: Flip back skin-side up and start brushing with melted butter & maple syrup every couple of minutes.
     – Check the temp: Cook until the internal temperature reaches 75°C for juicy, tender chicken.

  3. Rest & Serve Like a Pro

    Let it rest – Loosely cover the chicken with foil while you prep your sides.
    Finishing touch – Drizzle over the extra butter-maple glaze for a glossy, irresistible finish.

  • 1 Kg chicken thighs (Oyster-cut, skin on)
  • 2 Tbsp butter (melted for basting)
  • 1 Tbsp Maple syrup (for final glaze)

Marinade

  • 3 Tbsp Maple syrup
  • 2 Tbsp Sriracha (adjust for heat)
  • 2 Tbsp Soy sauce
  • 1 Tbsp Lemon juice (or apple cider vinegar)
  • 1 Tbsp Smoked paprika
  • 2 Tsp Garlic powder
  • 1 Tsp Onion powder
  • 1 Tsp Black pepper
  • 1/2 Tsp Salt
