Cooking Method

  1. In a bowl prepare your spices and seasonings, garlic, salt, paprika, chilli and the ancho chilli. Mix together set aside.
  2. Heat some oil in a pan, wait for this to heat then add the lamb mince and start to cook. Set Oven to 180°C.
  3. Halfway through the cooking add the seasoning you had made up, allowing to cook through, adding the tomato puree. Cook out and set aside once checked the seasoning.
  4. On a oven tray prepare your bread ready for toasting, once toasted remove from oven and get ready for filling.
  5. On your toasted bread, take the base and top with your lamb mince mix, finishing with grated cheese. For the lid of the toastie, top with the last of the cheese. Place these into the oven.
  6. Once you can see the cheese melting and seeping into the lamb mix, remove from the oven, piecing this toastie together with the cheese lid on the top.

This toastie is a big hitter with the ancho chilli creating an unique flavour adding depth and smokiness to the lamb, with creating a perfect balance between the heat.
