Pan Fried New York Strip Steak

New York strip is a delicious cut of steak that’s great for beginners and is a favourite for creating amazing results no matter how you like your meat cooked. Cooking Method

  1. Allow the steaks to rest for 30 minutes and come up to room temperature.
  2. Add salt and pepper to your taste.
  3. In a medium sized skillet on a medium-high heat, warm the olive oil. Once it begins to smoke, add the steaks to the skillet.
  4. Sear on all sides until they have a golden-brown crust.
  5. Add the butter and let it melt in the skillet before adding the garlic and fresh sprigs.
  6. Lower the heat to medium and let them cook until they reach the preferred internal temperature. Spoon the butter over the steaks during cooking.

While it’s not as tender as some cuts, many people enjoy the subtle chew that comes with eating New York strip. 

Once you have grilled the steaks for 4-5 minutes until charred, turn them over for 3-5 minutes for medium-rare, 5-7 minutes for medium, or 8-10 minutes for medium-well.

A trick for tenderising many steaks is to salt them around an hour before cooking. This also gives the steak time to come up to room temperature, which relaxes the muscle fibres. Of course, the steak cooking method has a big influence on tenderness too. For New York Strip we recommend frying on high heat for around 4 minutes a side, or until the internal temperature reaches 57°C.
