Rotisserie Pork Loin with Honey Mustard Glaze

We’ve partnered with our good friend Jack from Jacks Meat Shack to give you a selection of the tastiest recipes you can recreate at home with the best selection of our meat range. Our latest recipe includes a glorious rotisserie pork loin with a honey mustard glaze.

 

Cooking Method

  1. Remove the pork from the packaging, pat dry with a paper towel to remove any excess moisture. This will help the crackling to form.
  2. Cover the fat cap with a good layer of salt, place into the fridge for 8 hours or overnight if possible.
  3. When removing from the fridge, some moisture should have developed on the fat. Remove this with a paper towel.
  4. Preheat your BBQ to 160c, insert your meater into the thickest part of the pork.
  5. Place onto the rotisserie and allow the pork to spin with the grill lid open to help develop the crackling.
  6. Once crackling has started to develop close the lid and allow the pork to rotate.
  7. Mix 1 Tbsp English mustard and 1 Tbsp honey into a paste and brush the pork occasionally but try to avoid the crackling.
  8. Once the pork has reached 63c, remove and allow to rest before slicing.
