Seasoned Leg of Lamb Recipe

Our Latest recipe from Jacks Meat Shack involves a well-seasoned leg of lamb using Jacks own Cowboy Coffee seasoning! If you’re new to lamb and are someone who likes a well-seasoned cut of meat, then this is a great way to learn how to cook a proper leg of lamb. For this method we’re using a BBQ, but you can adapt your cooking method and still get great results. 

 

Cooking Method

  1. Pre heat grill or oven to 180c  
  2. Remove lamb from the packaging and pat dry with a paper towel
  3. Using a thin sharp knife pierce holes into the lamb sporadically and poke garlic cloves into those holes. 
  4. Score the surface of the skin using a sharp knife, this will help the rub and smoke flavour the lamb. 
  5. Using rape seed oil as a binder and coat the surface of the lamb 
  6. Select your desired dry rub and cover the lamb liberally 
  7. Insert your Meater into the thickest part of the lamb (optional)
  8. Place lamb into bbq and add a chunk of smoking wood for extra flavour 
  9. Once the lamb reaches 63c remove and rest before slicing.

Carving a leg of lamb isn’t as complicated as some people will have you believe. What you should know is that the bone runs through the lamb at an angle so it’s best to flip the lamb onto the side that feels more comfortable to you carve before doing the same on the other side.  

You’ll want to slice across the grain until you hit the bone. Continue all the way across the lamb of both sides before turning your knife parallel to the bone and slicing along the bone. Try to get as much meat off the bone as possible and enjoy!
