This method of creating dry aged tomahawk steak is new and very unique to where it was founded in Northern Ireland. To start the process, A grade sucklers are specifically chosen. When the animal has broken down, cuts are enclosed in a salt moss cave under set ageing conditions.

The walls are covered with extra virgin Irish oriel sea salt and Irish seas moss. Not found anywhere else in the world, the process relaxes the meat and results in a mind-blowing tenderness and texture that makes this meat a cut above the rest.
