St Louis Ribs

Ribs are a staple BBQ food and when they’re done right, the meat lovers dream. Thankfully Jack from Jacks Meat Shack has put together a delicious St Louis Ribs recipe that is sure to set your taste buds tingling. See how he does it below and prepare to get your hands messy with these fall off the bone ribs. 

 

Cooking Method

  1. Preheat your grill to 135C. 
  2. Remove the membrane from the back of the ribs. 
  3. Brush the ribs with sriracha sauce, applying an event coat all over. 
  4. Evenly cover the ribs with your multi-purpose seasoning. 
  5. Place on the grill over indirect heat and allow to cook until the bones start to protrude at the ends and there is some flexibility in the ribs when you lift them.  
  6. Lay out enough tin foil or butchers’ paper so it can easily wrap around the rack of ribs and add two large tablespoons of butter, wrap, and place the ribs bone side up back on the grill for another hour until nice and tender with an internal temperature of 93C.  
  7. Remove the ribs from the grill, unwrap, slice, and enjoy.

  • 1 x rack of St Louis ribs 
  • 2 tbsp sriracha as a binder 
  • Multi-purpose seasoning e.g., Tubby Tommy’s Chinese seasoning 
  • 2 tbsp butter

St Louis ribs are simply spareribs initially, but they are trimmed down with the sternum, cartilage, and rib tips being removed. This creates a rectangle shape with a more uniform look to make them easier to cook and eat. So, if you’re new to cooking ribs, these will be the ones to choose.  

One isn’t necessarily better than the other, it all comes down to personal preference. Baby back ribs can be meatier, but St Louis ribs offer the ease of cooking and eating, so it depends on what is more important to you and what you’re looking for in your ribs.
