Steak and Eggs with a Twist

Jack from Jacks Meat Shack is back again with a twist on a classic breakfast dish. You may have heard about saving your leftover roast dinner sides for bubble and squeak, but have you ever considered combining bubble and squeak with a good quality steak for breakfast? This recipe is perfect if you have leftovers from your roast dinner that you don’t want to go to waste by pairing with the classic steak and eggs breakfast for a great start to the day.

 

Cooking Method

  1. Remove steak from packaging and pat dry, removing any moisture to help create a lovely crust. 
  2. Season the steak liberally with salt 
  3. Add leftover vegetables to a food processor.  Pulse until combined. 
  4. Using a ring mould to form the veg mixture into hockey puck shaped discs. 
  5. Heat a small amount of oil in a frying pan and add your bubble and squeak to the pan.  Allow to cook for approximately 3 minutes per side. 
  6. (Optional) add a knob of butter to assist the browning process. 
  7. In a separate pan heat some oil ensuring that the pan gets searing hot. 
  8. Cook the steak for approximately 2 minutes per side.  
  9. Remove from heat and allow to rest. 
  10. In the steak pan add some more oil and allow to get hot, then crack an egg and fry until the yolk is cooked. 
  11. Slice the steak and assemble your breakfast. 

The Ingredients

  • 1 Sirloin Steak 
  • Leftover Vegetables from Roast Dinner (eg potatoes, parsnips, carrots, peas etc) 
  • 1 Egg 

What to serve with Sirloin Steak?

Sirloin steak we recommend pairing with egg, chips, or potato and a lovely glass of red wine.  

Frequently Asked Questions

Sirloin steak is packed with flavour and little fat making it a good tender choice of steak. This cut of meat is closer to the rear leg which is where the muscles gets the most exercise. 

Sirloin is a healthier choice of steak compared to ribeye due to it being a leaner cut with less saturated fats and more nutrients so if you’re looking for a low calorie steak this is the one for you.
