Chicken Thigh Gyros

Juicy, marinated chicken stacked & roasted, carved into crispy edges and wrapped up with fries, olives & homemade tzatziki. What more could you want for a high-protein weekday dinner?! 

Cooking Method

  1.  Pre-heat your oven to 180 degrees Celsius. 
  2. Start by marinading your chicken thighs in a bowl with Greek yoghurt and your Gyros seasoning of choice. I really rate the Tubby Toms version, it’s got such a good flavour. Pop some clingfilm over the top and refrigerate for as long as possible (I do this in the morning and leave in the fridge all day until dinner time) 
  3. Next, in a small bowl, add all the tzatziki ingredients. I use a cheese grated to grate the cucumber, then some kitchen roll to squeeze out as much liquid as possible before adding to the bowl. Put to one side. 
  4. Remove the chicken from the fridge.  
  5. Using a kebab spike, I slice a small onion and press that over the spike, down to the base to stop the meat sliding off, but also to prevent the bottom piece of meat from burning / sticking. 
  6. Gently press the chicken over the spike in the middle of the thighs, stacking each one on top of the other until you’ve used all the meat. 
  7. Sit the spike on an oven tray (easier to get it back out later) then pop into the oven, for 25 minutes. I use a MEATER thermometer to get the perfect cook and will take them out at 73 degrees C, then let them rest for a few minutes. Check the internal temperature at 25 minutes though, they may need an extra 5 minutes. 
  8. Whilst the chicken is cooking, air fry your skin-on-fries (I usually sprinkle with some extra Gyros seasoning then air fry for 10-12 minutes until crispy). 
  9. Using a sharp knife, carve slices of the chicken, turning the spike a little bit each time until you’ve reached the middle. 
  10. Mix the sliced chicken in the cooked juices at the bottom of the spike then you’re ready to serve. 
  11. Add a splash of water, then warm your flatbreads in the oven for 2 minutes. Now it’s time to build the gyros! 
  12. Lay out some tin foil, with a square of baking paper on top. Lay your flatbread on the baking paper, then add a generous helping of the homemade tzatziki. 
  13. Add your skin-on-fries on top, followed by a handful of pitted olives. 
  14. Now add the juicy, sliced chicken on top – don’t worry if it starts to fall apart, it’s all getting wrapped up! 
  15. Gently bring the two sides of the flatbread to meet each other in the middle, then using the bottom of the baking paper, fold this up over the bottom of the gyros. Now bring the paper in from either side, leaving the top of the gyros open. Repeat the same with the tin foil until it’s secured and tightly wrapped. 
  16. Add a couple of extra olives and a drop or two of extra tzatziki on the top, and enjoy!! 

The Ingredients

Gyros Chicken 

  • 600g Village Butchers Boneless, Skinless Chicken Thighs
  • 23g Tubby Toms “Zero to Gyros”
  • 101g Greek Style Natural Yogurt 

Tzatziki 

  • 85g Greek Style Natural Yogurt
  • 2 tsp Dried Mint
  • 117g Grated Cucumber (squeeze liquid out)
  • 1.5 tsp Garlic Powder
  • Salt and Pepper to taste 

Extras 

  • 3 Greek-style Flatbreads
  • 200g Frozen Skin-on Fries, Air Fried
  • 140g Pitted Olives 

What To Serve With Chicken Thigh Gyros 

These homemade gyros are best served with a few simple, fresh sides that complement the flavours. A crisp Greek-style salad with tomatoes, cucumber, red onion and feta works perfectly alongside, while extra olives and a little more tzatziki on the side are great for dipping. If you want something heartier, the crispy skin-on fries in the wrap are ideal, but you could also serve extra fries or roasted potatoes on the side.

Frequently Asked Questions

Yes – the chicken actually benefits from being prepared in advance. Marinate the chicken thighs in the yoghurt and gyros seasoning in the morning (or even the night before) and leave them in the fridge until you’re ready to cook. This gives the flavours more time to develop and keeps the chicken really tender.

If you don’t have a kebab spike, you can stack the marinated chicken thighs onto two metal skewers pushed through half an onion, or simply lay them flat on a baking tray and roast as normal. You won’t get the same stacked effect, but the flavour will still be just as good.
