Fakeaway Jerk Chicken Burritos

These jerk chicken wraps are packed with bold Caribbean flavour, combining crispy, caramelised chicken with coconut rice and peas and roasted vegetables. Finished with mango mayo and optional heat, they’re satisfying, vibrant, and perfect for an easy but impressive meal.

Cooking Method

Chicken 

  1. In large bowl, add your boneless, skin-on thighs and coat with Jerk seasoning paste of your choice. I really rate the Caribbean Store1 brand, we’ve had it before and the flavour packs a real punch. 
  2. Cover with cling film and into the fridge (for as long as possible). 
  3. Add your spray EVOO oil to a large frying pan and bring to heat. When hot, carefully add your marinated thighs, and fry for a good few mins, until the chicken browns. The marinade will look dark but you want this caramelisation and crispy skin for all the flavour! 
  4. Turn the chicken over to ensure both sides are fully browned and cooked through then remove from heat and rest. 
  5. Chop the thighs into rough slices ready to serve. 

 

Rice and Peas 

  1. Add butter to a pan, along with garlic, onion, thyme, all spice and bay leaves and sauté until the onion is translucent (3 mins or so). 
  2. Add in the coconut milk, 150ml water (leave 50ml back in case needed later), black beans and a pinch of salt then stir. 
  3. Once it starts to bubble, add in the rice and stir quickly. Cover the pan with a lid and leave to simmer for 20-25 mins until the liquid is all absorbed and the rice is nice and fluffy. Keep checking, I added a touch extra water near to the end. 

 

Roasted Veg 

  1. Add all the sliced veg into a tray / air fryer and spray with EVOO spray. 
  2. Season with salt and pepper 
  3. Air fry for 10 mins at 180 degrees then give them a shake up. Air fry for another 5 mins until softened but starting to crisp at the edges. 

 

Build 

  1. Start by laying your tortilla wrap on some tin foil. 
  2. Add your rice and peas to the centre of the wrap. 
  3. Next, layer with the roasted veggies. 
  4. Now add your jerk-spiced chicken until they’re fully loaded 
  5. Add habanero hot sauce if desired (I leave the chilli out of the rice and add at this stage, especially if you have those who don’t like the extra heat). 
  6. Top with flavoured mayonnaise – I use mango mayo for some sweetness. 
  7. To wrap, start by folding the side of the wrap nearest you, over the top and pull the ingredients back towards you. Then, carefully tuck in either side, and whilst continuing to pull the top of the wrap back down into the ingredients towards you, roll up and secure tightly with tin foil. Slice in half through the foil and check out the perfect cross-section. 
  8. Enjoy! 

The Ingredients

Jerk Chicken Thighs: 

  • 630g TVB Skin-on Chicken Thighs, Boneless
  • 4tbsp Jerk Seasoning Paste
  • 8 sprays EVOO 1-cal spray  

Rice and Peas: 

  • 20g Salted butter
  • 10g Garlic paste
  • 40g White onion, finely diced
  • 1tsp Dried thyme
  • 1tsp Allspice
  • 2-3 Bay leaves
  • 330g Reduced fat coconut milk
  • 150-200ml Water
  • 100g Black beans, drained
  • 141g Long grain white rice (uncooked weight) 

Roasted Veg:

  • 13 sprays EVOO 1-cal spray 
  • 175g Yellow bell pepper, sliced
  • 125g Red bell pepper, sliced
  • 112g White onion, sliced 

Extras:  

  • 3x Tortilla Wraps
  • Mango Mayonnaise
  • Habanero Hot Sauce  

What To Serve With Fakeaway Jerk Chicken Burritos 

These jerk chicken wraps pair perfectly with light, fresh sides to balance the bold flavours. Try a simple Caribbean slaw with lime and honey, sweet potato fries, or grilled corn with butter and chilli. A fresh mango or pineapple salad also works beautifully to add a cooling, fruity contrast.
