How to Grill (and Master) the Perfect Beef Burger  Cooking Method

1. Start with Real Quality Beef

None of that floppy, midrangery supermarket stuff. Our Premium Steak & Brisket Burgers are designed to deliver texture, flavour, and that satisfying juiciness every time. If yours feels slim on fat, you’ll miss that crimson, mouthwatering centre we’re all chasing. 

 

2. Prep with Care

  • Form your patties about ¾–1 inch thick and press a tiny dimple in the middle—pressure points aren’t for pushing oil off! That dimple helps them cook evenly. 
  • Season with salt and pepper only when you’re just about to cook. Salt too early and the meat tightens up. Keep it simple, keep it juicy. 

3. Burger Doneness & Times

Here’s a handy guide so you know when your burgers are done just right—not overcooked, not a meatbrick.

Medium  7–8 minutes total  60–63 °C (140–145 °F)

Note: Flip once—no pressing, no letting those precious juices bleed out.

If you're cooking on a grill or BBQ, you’re looking at those grill times above. If you're doing it in a frying pan, treat it the same—but watch the heat. Too hot? You’ll scorch the crust and ignore the inside. Too gentle? You’ll never get that crackle. 

5. Why It Matters

  • Mediumrare (54–57 °C / 130–135 °F): Softcentered, juicy, with that bright red blush—but still warm. 
  • Medium (60–63 °C / 140–145 °F): A touch firmer, pink centre. Great compromise if some at the table aren’t into red meat vibes. 
  • Mediumwell (65–68 °C / 150–155 °F): Pink just goes deeper—but still moist if your beef’s up to scratch. 
  • Welldone (>71 °C / 160 °F): Full brown, no pink. Takes attention and care to avoid dryness—but it can still sing if you do it right. 

 

6. Thermometer—Your New Best Mate

If you’re unsure about times, always use an instantread thermometer. It’s the only sure way you’re not over—or under—shooting. Trust your tool, not your guess. 

 

7. Give It a Rest

Once off the heat, let the burger rest for 3–4 minutes. This is not the time for impatience. The juices settle back—skip this and you risk losing all that effort down the sink. 

8. Safety First

If you’re cooking for people who need a bit more reassurance—kids, older folk, or folks just fussy about meat—aim for at least 71 °C (160 °F) (groundbeef wise). That’s welldone territory, but a good-quality burger can still be succulent if you stop poking and pressing.

  • Let patties come up just off fridgecold before cooking—around 10–15 minutes on the counter. That middle won't stay raw while the outside burns. 
  • Use mediumhigh heat—you want a crust without crippling the inside. 
  • Don’t push the patty down—that’s just dry, sad meat oozing out. 
  • Want a melt? Add the cheese in the final minute, pop a loose lid on the pan or close the BBQ lid—cheese melts, burger stays juicy.
