Cooking Method

  1. Combine gochujang, soy sauce, sesame oil, brown sugar, lime juice or vinegar, garlic and ginger paste, plus a drizzle of honey or mirin if you like things a bit sweeter. Massage this bold mixture into the sirloin, making sure it’s thoroughly coated. Transfer the meat to a sealable bag or shallow container, cover it, and let it marinate in the fridge for at least 4 hours - overnight is ideal for deep flavour.
