Available in generous 3kg joints (serves 8-12 people depending on portions) whole half sirloin, freshly prepared, vacuum-packed for maximum freshness, ready for roasting or portioning. Delivered fresh in temperature-controlled packaging and suitable for freezing.
Bring the joint to room temperature (about 1-2 hours out of the fridge) for even cooking. · Pat dry thoroughly and season generously with sea salt, black pepper, and optional herbs (e.g., rosemary, thyme, garlic) or a light rub for extra flavour and crust. Â
Preheat oven to 220°C (fan 200°C / Gas 7) for initial high-heat sear, then reduce. Place in a large roasting tin (on a trivet of vegetables like onions, carrots, celery for aroma if desired). Roast uncovered for 20-30 minutes to develop a deep golden crust, then lower to 180°C (fan 160°C / Gas 4) and continue low and slow: allow approximately 20 minutes per 500g plus 20 minutes for medium-rare (recommended for optimal tenderness and juiciness), or adjust for preferred doneness (use a meat thermometer, target 50-55°C internal for rare, 60-65°C for medium). Rest loosely covered with foil for 30-45 minutes (essential for this size) before carving, this lets the juices redistribute for incredibly tender, flavourful slices. Â
Carve thinly against the grain into even portions or portion into steaks before cooking if preferred. Â
