Bring the steak to room temperature (about 1-2 hours out of the fridge, depending on size) for even cooking. · Pat dry thoroughly and season simply with sea salt and black pepper (minimal seasoning lets the refined Wagyu marbling and flavour shine through).
For reverse sear (recommended for this thick cut): Preheat oven to 110-120°C (fan 90-100°C), place on a rack in a roasting tin, and roast low and slow until internal reaches 48-50°C (about 1.5-2.5 hours depending on thickness). Then sear hot on a grill, BBQ, or cast-iron pan over very high heat for 1-2 minutes per side to develop a rich crust.
For direct grilling/charcoal: Preheat grill/BBQ to high/direct heat, sear over flames 4-6 minutes per side for medium-rare (internal 52-55°C), then move to indirect heat to finish gently if needed. Rest loosely covered with foil for 10-15 minutes (or longer for this size), this allows the marbling to redistribute juices for maximum tenderness and flavour explosion.
Carve thickly against the grain, serving portions off the bone for easy sharing (the bone adds immense flavour during cooking).
