Bring the chicken to room temperature (10-15 minutes out of the fridge) for even cooking and to retain maximum juiciness. No need for complicated marinades – these fillets shine with simple seasoning.
For pan-frying: Heat a little oil in a heavy-based pan over medium-high heat. Cook 200-250g fillets for 6-7 minutes per side until golden and the internal temperature reaches 75°C (165°F). Rest for 3-5 minutes before slicing.
For oven roasting: Preheat oven to 200°C (180°C fan). Place fillets on a tray, lightly oil and season, and roast for 20-25 minutes (depending on thickness) until they hit 75°C internally.
For grilling/BBQ: Preheat to medium-high. Grill 5-7 minutes per side, turning once, until beautifully charred and cooked through.
For stir-fries or curries: Slice into strips and cook over high heat for 4-6 minutes until sealed and fully cooked.
Always use a meat thermometer for perfect results and food safety. If frozen, defrost slowly in the fridge overnight before cooking. Never refreeze once thawed.
