Bring the thighs to room temperature (about 20–30 minutes out of the fridge) for more even cooking.
Pat dry thoroughly and season generously with sea salt, black pepper, or your favourite spices, herbs, or BBQ rub.
For roasting: Preheat oven to 200°C (fan 180°C / Gas 6). Place on a baking tray, drizzle with oil, and roast for 30–40 minutes until the skin is crispy and golden and the internal temperature reaches 75°C.
For pan-frying or BBQ/grilling: Cook over medium-high heat for 6–8 minutes per side until charred and fully cooked through (75°C internal temperature).
For curries, stews or slow cooking: Simmer gently for 25–35 minutes until tender.
Always check doneness with a meat thermometer, juices should run clear.
Rest for 3–5 minutes before serving to keep the meat wonderfully juicy.
