The grain fed finish builds inter muscular fats and suits this type of low and slow cooking, brisket needs this cooking method due to its naturally tough texture and being grain fed and caring the extra fat contents gives better end results

Smokers Paradise, Grain fed imported whole packer briskets are the barbecue & smoking community holy grail.
Bring the brisket to room temperature (about 1-2 hours out of the fridge, depending on size) for even cooking.
Pat dry thoroughly and apply a generous dry rub with sea salt, black pepper, and your favourite BBQ spices (simple Texas-style salt & pepper often best to let the grain-fed richness shine).
For smoker/BBQ low-and-slow: Preheat smoker or grill to 105-135°C (225-275°F) with wood like oak, hickory, or mesquite. Smoke fat-cap up (or down depending on setup) for 8-12+ hours (or until probe-tender around 93-96°C internal), wrapping in butcher paper or foil at the stall (around 65-70°C) if desired to push through. Target 1-1.5 hours per kg as a rough guide, but cook to feel, not time.
For oven alternative: Preheat to 110-120°C (fan 90-100°C / Gas ¼-½), place in a covered roasting tin with a splash of stock, and braise low and slow for 8-10+ hours until fork-tender. Check our guide to safe cooking temperatures for details.
Rest loosely wrapped (in foil/towel in a cooler) for 1-2 hours (or up to 4-6 for hold) this crucial step redistributes juices for maximum tenderness and smoky flavour explosion.
Slice against the grain (separate point and flat if desired) for serving,. thin slices for sandwiches or thicker for platters.

Serve simply to highlight the smoky bark, juicy marbling, and rich grain-fed beefiness, or glaze with BBQ sauce in the final stage; pair with classic sides like coleslaw, pickles, cornbread, beans, mac ‘n’ cheese, or white bread for the ultimate BBQ feast.
