Available in generous 1kg packs, pre-sliced into ready-to-cook strips (plain or Cajun-flavoured), trimmed, and ready for your wok, pan, or grill. Delivered fresh and suitable for freezing; serves 4-6 people depending on portions.
Bring the strips to room temperature (about 10-20 minutes out of the fridge) for even cooking.
Pat dry thoroughly if needed (especially for Cajun-coated to promote crispiness) and season lightly if plain – the Cajun version is perfectly flavoured for immediate use.
Heat a wok, heavy-based pan, or grill to high heat with a drizzle of oil (or high-smoke-point oil for stir-fry). Add the strips in batches to avoid overcrowding, stir-fry or sear for 2-4 minutes total (1-2 minutes per side) until lightly browned outside but still tender and pink inside, fillet strips cook extremely quickly due to their leanness and tenderness; avoid overcooking to prevent toughness. Rest briefly (1-2 minutes) off the heat, this keeps them juicy and succulent.
