Bring the joint to room temperature (about 1-2 hours out of the fridge, depending on size) for even cooking.
Pat dry thoroughly and season generously with sea salt, black pepper, and optional herbs (e.g., rosemary, thyme, garlic) or a light rub for extra flavour and crust.
Preheat oven to 220°C (fan 200°C / Gas 7) for initial high-heat sear, then reduce. Place in a roasting tin (on a trivet of vegetables like onions, carrots, celery for aroma if desired, or add liquid for pot-roast style). Roast uncovered for 20-30 minutes to develop a golden crust, then lower to 160-180°C (fan 140-160°C / Gas 3-4) and continue low and slow: allow approximately 25-30 minutes per 500g plus 20 minutes for medium (recommended to keep it tender and juicy, as silverside benefits from gentle cooking), or adjust for doneness (use a meat thermometer, target 60-65°C internal for medium). For pot-roasting, add stock/wine and cover for extra moisture.
Rest loosely covered with foil for 20-30 minutes before carving, this lets the juices redistribute for incredibly tender, flavourful slices.
Carve thinly against the grain into even portions for serving.
